Andy’s Greek Chicken Recipe

Today I was feeling especially nostalgic. I decided that I would make Andy’s Greek Chicken recipe. Every time I make this delicious concoction I think back to my dear friend Andy making his fabulous Greek Chicken. I don’t know what I enjoyed more eating it or watching him sashay around the kitchen with a dry martini on the rocks. Because for Andy every day was an excuse for a celebration. When I first met Andy he was already in his seventies. He was the coolest old greek guy I ever met! Hair white as snow-slicked back in a ponytail. Oh, and how could I forget his diamond earring. The first time I ever met him he was standing in his kitchen making a very large pan of Moussaka. In true Andy style, he had already started celebrating early and was screaming Moussaka over and over!

You see it was the very first time my boyfriend had brought me home to meet his parents. I can only imagine the utter horror his wife must have felt as I stood witness to the fiasco.  I took one look at that drunken smiling face and knew I had found a friend for life. So the years passed and my relationship waned by my friendship with Andy weathered the test time. For many years we continued meeting for our liquid lunches. Then one sad day I got the news that his dear wife Barb had suddenly passed. Now twice a widower he decided to move to Waukesha Wisconsin to be closer to his girls. Sadly in 2009, he passed from cancer.

Andy’s Greek Chicken

4 Large Potatoes peeled and quartered
1/4 cup olive oil
2 lemons
5 Garlic Cloves
1/2 teaspoon salt
and last but not least rosemary and oregano. ..

Peel and finely chop garlic. In a large bowl toss the garlic, olive oil, salt, and spices together, Pour over the cut chicken. Half and squeeze lemon juice over chicken and potatoes. Throw everything together and roast at 375 degrees for 40 minutes to an hour. Sorry, folks Andy never measured anything! This is the closest I’ve gotten to his recipe. I hope you enjoy it as much as I do.
